Don’t worry, it is not that difficult to make a chocolate cake from scratch, just gather your ingredients, and get backing one step at a time:
Begin by using a machine to mix eggs, invert sugar, and caster sugar until a smooth consistency is achieved. Integrate the dry ingredients, including almond powder, flour, cocoa powder, and baking powder. Then, add the melted butter and chocolate, concluding the batter with heavy cream for a silky texture. Preheat the oven to 165 degrees Celsius and bake the batter until perfection is reached.
Simultaneously, craft the caramel chocolate cremeux by initiating a light caramel with sugar, followed by deglazing it with butter and glucose. Incorporate hot cream into this mixture, allowing the caramel to dissolve. Emulsify the resulting caramel-cream mixture with milk chocolate, transferring the delightful blend to a container for cooling in the chiller.
For the caramel, repeat the process for the topping.
How to assemble:
Once the chocolate cake has been baked and adequately cooled, serve delectable slices adorned with the caramel chocolate cremeux and a generous drizzle of caramel for a truly indulgent treat.
